Know the Machine Before You Look at Price
Bakery covers a lot of kit, and each type has its own weak spot.
- Deck ovens: The workhorse for bread and pizza. Check whether it's gas or electric and that it matches your supply. Fire it and watch each deck reach temperature evenly. Cold spots mean tired elements or a failing burner, and a stone deck that's cracked is a real cost to replace.
- Convection and rack ovens: Great for volume and trays. Check the fan runs smooth and quiet, the door seals are intact, and the trolley or rack it takes matches your trays. A rack oven that won't fit your existing trolleys is an expensive mismatch.
- Spiral and planetary mixers: The heart of the bakery. Listen for a smooth motor under load, check the bowl and the spiral or hook for heavy wear, and look at the bowl seal at the base. - Dividers, moulders and breading or battering machinery: Moving parts and belts wear. Run it if you can, check the belts and blades, and make sure guards are present. Missing guards are a red flag on how it was looked after.
What to Check Before You Pay

- Power supply: Most serious bakery kit runs three phase. Get an electrician to confirm your supply before you commit, not after it's delivered. A three phase mixer on a single phase site is a very heavy paperweight.
- See it working: Ask the seller to run it with a load if possible. A mixer spinning empty tells you little. Under dough is where a worn motor or gearbox shows itself.

- Secure the moving parts: Tape bowls, remove hooks and spirals, and wrap them separately so nothing swings loose in transit.
